Green Eggs And Ham

Ever wonder what green eggs and ham taste like? Me too! But I couldn’t imagine the flavor and the how until now.

Peppered string beans covered and mixed with a sunny side up? Yes!

Lime? No, not with eggs.

Seasoned with cilantro? Yummy!

Food coloring in scrambled eggs? Hmm, a great green but needs spice.

Eggs with avocado? Oh, yeah!

The inspiration — Green Eggs and Ham, by Dr. Seuss. A curiosity that hasn’t vanished. Although I haven’t read the book in years.

The closest I’ve gotten in real life is yellow eggs and ham. It’s time to go further! I’m not a pork eater anymore but can make an exception for this experiment.

You can get creative. Full green egg or kind of, sorta green egg. Vegan style? Whatever you prefer.
