Greek Traditions: Don’t Follow the Recipe

…when you think you know best

When it comes to food, Greeks take matters into their own hands.

That means they don’t follow recipes…they create their own recipes!

For one thing, they don’t really measure quantities.

3 tablespoons of butter can easily turn into 6, 1 cup of sugar can easily turn into 2 and 2 large tomatoes can easily turn into 4, just because they think that is best!

Rule of thumb in every traditional Greek home is: The more, the better.

My aunt Lisa would add so much salt in every food and so much sugar in every dessert that it was impossible to eat afterwards.

I had a friend whose grandmother would always put 4 cups of olive oil in Greek salad (even though less than 1 cup is needed) because she thought that was the only way to really enjoy the salad!
