Garlic Butter Chicken & Noodles and Green Beans
Chicken in a savory garlic butter sauce, garlic butter noodles, and green beans
This is a satisfying chicken dish with a savory garlic butter sauce, served with garlic butter noodles and green beans.
Originally made with boneless, skinless chicken breast, but you can use any cut of chicken you would like. The garlic butter sauce is simple to make and tastes great poured over the chicken and noodles. The green beans are seasoned, and complete with a little bacon.
Garlic Butter Chicken
Ingredients:
3 Tablespoions olive oil
4 boneless, skinless chicken breasts, pounded to an even thickness
1–2 teaspoons poultry seasoning
1 teaspoon salt
1 teaspoon pepper
1–2 teaspoons garlic powder
1–2 teaspoons onion powder
1 tablespoon minced garlic
1/2 cup chicken broth
3 tablespoons butter
Instructions:
- In a large skillet, heat the olive oil
- Season chicken with salt, pepper, garlic powder, chicken seasoning and onion powder
- Sear the chicken over medium-high heat until one side is a medium golden brown (5–7 minutes). Flip and sear the other side until a medium golden brown, and cook through
- Take chicken out of the pan and let rest. Add chicken broth to pan and allow to get hot. Add the butter, stirring until it melts
- Add the minced garlic, cooking until it’s fragrant, stirring constantly
- Add chicken back to pan, covering with sauce. Turn off the heat and serve
Garlic Butter Noodles
Ingredients:
8 ounces of pasta noodles. I used thin spaghetti noodles, but any kind of pasta is fine
4 tablespoons butter, divided
1 tablespoon minced garlic
1/2 cup grated parmesan cheese
1/2 teaspoon salt
1/2 teaspoon pepper
Instructions:
- Cook pasta in salted water and drain. Reserve 1 cup of pasta water
- In the pan, melt 3 tablespoons of butter over low heat. Add the minced garlic and saute, stirring constantly. Do not brown the garlic, it will become bitter
- Add the cooked pasta and toss. Add the parmesan cheese, stirring to melt the cheese. Add the reserved pasta water, a couple tablespoons at a time, and 1 tablespoon of butter. Keep adding reserved pasta water until pasta is covered and glossy
- Season with salt and pepper, toss, and serve
Green Beans and Bacon
Ingredients:
2 pounds of fresh or frozen green beans
1 medium onion, diced
1–2 teaspoons minced garlic
4 strips of bacon, chopped
2–3 cups chicken broth
2 tablespoons butter
1/2 teaspoon salt
1/2 teaspoon pepper
Instructions:
- In a large pot, add chopped bacon and onion, cooking over medium heat until bacon is brown and onions are soft
- Put bacon and onion in a bowl and set aside, keeping the bacon grease in the pot
- Add green beans and cover with chicken broth. Bring to a boil, cover and reduce heat to a simmer. Cook until green beans are done.
- Drain off excess chicken broth.
- Add bacon and onions back to the pan. Add butter, salt and pepper, and heat for 1–2 minutes and serve
