Fried Rum Cake

Image- Author

Recently the results of a study came across my desk about Community-Based Tourism and what the New World Traveler was interested in — food festivals, farm tours, and traditional cuisine. It got me thinking.

We get the sun-sea-and-sand tourists, can we get some of these new gals and guys also?

I can share with them how I fry rum cake. It makes a delicious dessert topped with fresh fruits and some homemade ice cream.

After Christmas, I take the remainder of my rum cake, cut it into thin slices and freeze. Whenever I feel the urge; I take out a couple slices, and with a frying pan, made hot on the stove, I add the still-frozen pieces of cake.

I let them fizzle and sizzle and brown (or burn) and then enjoy fried rum cake. Awesome.
