Food for Thought…Salsa

Warm your stomach and soul with an easy salsa recipe.

My good friend, Katherine was kind enough to share this recipe with me many years ago when we all lived in Columbus, Ohio. It is an extremely fast easy go-to appetizer that is sure to please!

Salsa

  • 1 slice sweet onion
  • 1/2 large bunch of cilantro
  • 1/2 clove of garlic (or a dash of dried if you do not have fresh)
  • Juice of one lime
  • 1/4 tsp. salt
  • 2 cans Rotel diced tomatoes with chilies, drained

Add all ingredients to a food processor and pulse about five times or until you reach your desired consistency. Taste and adjust salt and lime accordingly. If you like it extra hot add a few slices of jalapeño.

Serve with tortilla chips.

That's it, folks. Homemade food does not need to be complicated. This will last around four days refrigerated unless, of course, you consume it all the first day. 😉
