Exploring Singapore’s Crab Culinary Delights
Unveiling the Unique Charm of My Favorite — Chili Crabs

Imagine the salty sea breeze, the sound of waves gently crashing against the shore, and a table set by the seaside, laden with tantalizing treats. As my husband and I sit at our assigned table, we can’t help but notice a bowl of peanuts and a zesty mix of pickled vegetables reminiscent of kimchi, setting the stage for a culinary adventure.

With chopsticks in hand, we eagerly delve into the appetizing pickled vegetables, savoring the chili-infused tang that awakens our taste buds. The excitement builds as we peruse the menu, contemplating the wide array of seafood delights that await.

Six years may have passed since our last visit, but the Seafood Center hasn’t lost its charm. It remains a haven for seafood enthusiasts, offering a diverse menu where 80 percent of the options feature the ocean’s bounty. The choices are abundant, ranging from fine dining to more casual options.

As we scanned the menu, we could not resist the allure of Deshelled Cereal Prawns — a delectable dish where the crispiness of the cereal complements the succulence of the prawns.

The stir-fried baby Kai-lan, a leafy green vegetable, adds a touch of freshness to the meal, creating a harmonious balance of flavors.

To accompany our seafood feast, we’ve wisely chosen Fried Youtiao, a popular Chinese cruller, and a bowl of steamed rice to soak up the savory goodness. Yet, the pièce de résistance, the star of the show, is the Chili Crab served with fluffy Chinese bread, known as mantou. This iconic Singaporean dish is a symphony of sweet, spicy, and savory flavors, with the mantou acting as the perfect vessel to soak up the luscious chili crab sauce.

Here is a general overview of the key components of Chili Crab:
- Crab — Mud crab is commonly used for Chili Crab due to its succulent and sweet meat. The crab is usually chopped into pieces, making it easier to eat.
2. Chili Sauce — The heart of the dish lies in its chili sauce. The sauce is a blend of ingredients that typically includes chopped fresh red chili peppers, garlic, ginger, and sometimes shallots. The level of spiciness can vary depending on personal preference.
3. Tomato Sauce or Tomato Paste — to balance the heat of the chili, a tomato-based element is often added. Some recipes use tomato sauce or ketchup to provide a slightly sweet and tangy undertone.
4. Eggs — Beaten eggs are often incorporated into the sauce, creating a velvety texture.
5. Sweetener — To add sweetness to the dish, sugar or sweet soy sauce (kecap manis) may be used. This sweetness helps to balance the spiciness and acidity.

9. Spring Onions and Coriander — These fresh herbs are often used as garnishes, adding a burst of color and freshness to the finished dish.
