Eggless Sponge Cake

A childhood memory

Both my parents grew up vegetarian and only had eggless cake growing up. This is particularly my mother’s favorite dish and I loved it when I was a child. It is a cake that has just enough sweetness and moisture to tickle the taste buds. I would say it is absolutely delectable.

This is a perfect cake to bake for the vegetarians in your life!

Cooking Time: 20 min. Preparation Time: 10 min.

Ingredients 1/2 can of condensed milk 140 grams self-raising flour 1 level teaspoon baking powder 1/2 teaspoon soda bi-carb 60 ml melted butter or margarine 1 teaspoon vanilla essence

Method 1. Sieve the flour, baking powder, and soda bi-carb together. 2. Mix the flour mixture, condensed milk, melted butter, essence, and 75 ml. (2 1/2 fl. oz.) water and mix well. 3. Pour the mixture into a greased 150 mm. (6") diameter tin. 4. Bake in the oven at 200 degrees C (400 degrees F) for 10 minutes. Then reduce the temperature to 150 degrees C (300 degrees F) and bake for a further 10 minutes. 5. The cake is ready when it rises above the sides of the cake pan.

This recipe brings back so many memories. It reminds me of my childhood, back when there were no responsibilities, just happiness and fun all day, every day. We make this cake every birthday and it is a real treat to share with friends and family.
