My favorite breakfast on St. Paddy’s Day
I marvel at our fondness to label everything in our lives. Perhaps it’s the influence and pace of our fast food and neck-bending social media culture.
But I live in the slow lane, off the beaten path between a tiny Hawaiian town and the ocean hunkered down in the jungle off-grid style.
My breakfast happiness is a piping hot mug of rooibos-chai-black Irish tea and an egg Mc Buffet. Yes, I’ve concocted my own tea!
Egg Mc Buffet Recipe
Two halves of a toasted (over the stove) English muffin, a sliced hard-boiled egg, topped with rich creamy avocado (appropriately green) with a spread of garlic mayo left over from steamed asparagus the night before.
My tummy’s happy, I’m in garlic-breath solitude communing with nature.
