Easy Bean Burritos

For my weekly meal plans, I make five cups of dried pinto beans. They take forty minutes in an instant pot, and I make three different meals from them.

These basic burritos are the first meal. I often stuff them with rice, guacamole, pico de gallo, and salsa. Or smother them with creamy tomatillo salsa.

Ingredients

  • 8 wheat tortillas
  • 4 cups refried beans

Optional ingredients

  • Pico de gallo
  • Salsa
  • Guacamole or sliced avocado
  • Mexican rice
  • Jalapeños
  • Chopped lettuce

Directions

  1. Preheat indoor grill to 400°F.
  2. Place 1/2 cup beans and any optional toppings in the warmed tortilla and roll into a burrito.
  3. Place on grill and cook for roughly 4 minutes on each side.
