Curry Chicken — One of The Foods I Love to Cook

A favorite dish born in childhood and one I am good at

A land of many peoples

I come from a diverse world.

A country of several ethnic groups of people.

People whose culture lends itself to an exhilarating metropolitan of culinary delights!

Since we have been forced to spend greater amounts of time languishing at home, food has proved to be both a good servant and a bad master 🤐.

Curry is a favorite of mine ever since I can remember.

I am no top chef, but your girl can cook some good curry!

I can drop some curry on anything and make it de-lec-ta-ble!

This image above is from a curry chicken dish I cooked last summer and shared on my blog.

Curry is one of those truly versatile dishes that can be great as a stand-alone dish or as an accompaniment to enhance even the blandest of foods.

Curry gives it pizzaz!

Any meat or vegetable can be curried to add a variety of tastes that teases and delights the tongue.

Let me again say, “ I love curry in any form!”

This is one of the ways I make curry.

Ingredients

  • 3 lbs chicken, cleaned, washed, and seasoned to your taste. (I love chicken with skin on as the fat adds something unique to the taste.)
  • Add 6 heaping tablespoons of curry to the chicken, mix, and allow to marinate for about 4 hours, overnight if you have the time. The longer, the better.

  • Chop/grate 1 medium onion.
  • A teaspoon of grated or chopped ginger is optional.
  • 1 Tbsp of whole cumin seeds.
  • I Tbsp Garam Masala powder.
  • 2 medium Irish potatoes if you like.
  • Salt to taste.
