Cinnamon, a Gift Fit for a Noble
A woody spice
True cinnamon goes by Ceylon, like the previous name for Sri Lanka — where it originates. It possesses a subdued flavor compared to what we buy in stores. The bold seasoning in the grocery aisle goes by cassia, one of three other trees in the same family.
Cinnamon consists of the bark from these trees. It is used in different cultural traditions from Ayurveda to ancient Egypt, and here we find the earliest evidence of its use in 2000 BCE. Folk practitioners employ it to improve digestion, respiration, and blood sugar regulation.
