Chocolate and Vanilla Cake
Sunday Treat
I have a penchant for creamy cakes, and I was just craving one. I decided it would be a chocolate and vanilla cake to please all tastes. It’s perfect for a celebration or just an ordinary day without any specific reason. So, today being Sunday, I chose to whip up something sweet.
Ingredients:
Cake Layers:
- 6 egg whites
- 6 tablespoons sugar
- 1 teaspoon vanilla extract
- 6 tablespoons ground walnuts
- 3 tablespoons flour
Cream Filling:
- 6 egg yolks
- 500g milk
- 5 tablespoons sugar
- 1 vanilla pod
- 3 tablespoons cornstarch
- 100g dark chocolate
- 100g butter
For Decoration:
- 50g dark chocolate + 2 tablespoons milk
- 50g white chocolate + 2 tablespoons milk
Instructions:
🍰 Cake Layers:
- Whisk the egg whites with a pinch of salt until stiff peaks form, then add sugar and continue whisking until the mixture becomes glossy.
- Mix the flour with ground walnuts and gently fold it into the egg white mixture using a spatula with bottom-up motions.
- Pour the batter into a baking tray (30 x 34 cm) lined with parchment paper. Bake in a preheated oven until lightly golden on top. Remove the cake from the tray and let it cool, then carefully remove the parchment paper.
🍰 Cream Filling:
- Dissolve the cornstarch in 3–4 tablespoons of cold milk, then add it to the egg yolks and mix.
- Split the vanilla pod lengthwise and scrape the seeds using the tip of a knife. Put the pod and seeds in a saucepan with milk and heat on low heat until it starts to boil. Remove the pod from the milk and slowly pour it over the egg yolk mixture while continuously whisking. Put the mixture back on low heat and stir until it thickens, resembling a pudding.
- Set the cream aside and divide it into two equal parts. In one part, add pieces of broken chocolate and mix until melted. Cover both creams with plastic wrap and let them cool.
- Once cooled, beat the softened butter and gradually add the vanilla cream while continuously mixing.
🍰 Assembly:
- Cut the cooled cake into three equal strips.
- On a serving platter, place one layer of cake and spread the chocolate cream over it. Place the second layer and spread the vanilla cream. Cover with the last layer of cake.
🍰 Decoration:
- Melt the dark chocolate with milk. Put the chocolate in a piping bag and cut off one corner. Draw lines over the cake. Repeat the same process with white chocolate.
🍰 Chill:
- Chill the cake in the refrigerator for a few hours.
🍰 Serving:
- After it has chilled, cut the cake into slices using a knife dipped in warm water.
It’s truly a delight! The fact that my boyfriend is so enamored with this dessert makes me even more happy than I already am about how delicious this cake turned out. I fervently hope there will be a few slices left by the time his parents visit us, because I’m sure they’ll appreciate this dessert as much as we do. I’ll definitely be making this cake again because it’s absolutely wonderful and deserves to be enjoyed over and over again.
