Chayote — a New Favorite
This versatile squash has many benefits

Dinner last night featured the chayote — also called the vegetable pear, chocho, and christophene. I’d never heard of this squash before.
Cut off the wrinkled ends, slice in half lengthwise, remove the single seed, and dice into 1/4" cubes. The rind is thin and delicate and poses no difficulty in cutting.
Fried with chopped cilantro, lime zest, and a dash of salt, it’s a delightfully light yet filling base for a meal.
It also has numerous health benefits. It is purported to be good for your heart, skin, and thyroid. Various sources claim it helps regulate blood sugar and cholesterol levels, prevents cancer and bone loss, and improves memory.
It does these things by being high in antioxidants, potassium, folate, and fiber. Its phytochemicals also help with epilepsy and kidney stones.
