Have you tried a ‘Bombay sandwich’?
It’s a special street food
Not as popular as the “vada pao”
But tastes just as good!
Soft slices of bread are adorned
With the flavorful green spread.
Chopped tomatoes, crispy cucumbers
With onions are laid on this bed.
Their texture and tastes combined
Bring wonderful variety.
Tender boiled potato pieces layered atop
To offer warmth and satiety
No toasting, no grilling
No cheese or culinary wizardry required.
This lip-smacking easy delight
Is ready whenever you are inspired.

Full disclosure: As the ‘Incomplete’ below picture suggests, I devoured one after I wrote this. (okay, I confess, as I wrote this.) And hence, the requirement for using the free image at the outset! What’s shown above is actually a vada pav, and a fusion one at that! (with a dabeli, another popular street snack but not native to Mumbai.) But Bombay sandwiches are the best- quick easy, healthy, encompassing a riot of flavors that can be whipped up and consumed anywhere, anytime, by anyone!
