Dear Readers — a happy new year to all of you out there in our very own Medium Cyberspace!
Some of you might remember that my human slave Seaspray D would receive rare guests @ our Batavia Coast, West Australian hideaway — and that his friend had promised to make and cook Vietnamese Spring Rolls (Episode-Meow 205).
Well, it happened dear readers — what lovely kind people — Ms Sang Le from Saigon, Vietnam — and her Chinese Malaysian Boyfriend Mr Kim from Kota Kinabalu, Sabah — Malaysia rocked up on New Year’s Day for a visit and a laugh.
You might be asking — did Lady Donga stick around and socialize dear readers?
Well, no — I shot off like a rat up a drain pipe (or rather a cat chasing a rat up a drain pipe) to escape these strange human beings.

Yes, I may be able to wrestle snakes to death — but strange humans no — so I took refuge under the bed…instead…where I played dead.
I remember the girl Sang Le who I was ok with once before, but usually two humans at any one time is my limit these days.
Sang Le’s boyfriend (Kim) reminded me of 7-foot-tall American actor Richard Kiel — who played Jaws in James Bond’s The Spy who loved me and Moonraker.

Whereas my human Seaspray D said he looked more like his favorite Addams family character — Lurch.

However, Kim was a lovely man dear readers — he must have been, because he bought his girlfriend Sang Le a brand new $2500 Apple iPhone for Xmas and her ticket on the inaugural pre Xmas Vietnam Airlines direct flight from Saigon, Vietnam to Perth, Australia.

Never mind, I’m happy with the old Samsung Android that Seaspray D lets me play on and use to check my Medium stats, and post stories like this dear readers!
I won’t pressure my human to buy me an apple — not that pussycats eat apples la!

In the meantime — back to the main event — Vietnamese Spring Rolls!
Ingredients: Spring Roll Rice paper Sheets, Bean Sprouts, Minced Meat or Prawn, Egg, Fish Sauce, Carrot, Vermicelli Rice Noodle, Spring Onion, Onion, Pepper, Fish Sauce and Love.
Method:
*Soak vermicelli rice noodles in cold water until soft then add to large bowl
* Slice carrot, spring onion, onion, add to large bowl with minced meat or prawns
*Mix all the above in with 1 egg, pepper, and fish sauce — then set aside
- Lay rice paper sheet on plate and dampen with water on both sides

- Place 2 dessert spoons into the center of the wet rice paper sheet

- Fold rice paper inwards from left to right — or right to left

- Then roll with mixture inside until it becomes a spring roll

- Keep rolling until all the mixture has finished.

- Heat oil in a wok or fry pan — fry on medium heat to ensure internal ingredients are cooked without browning the outside of the spring roll too much — unless you want to eat immediately.

- However, Master Vietnamese Chef Sang Le suggests partial cooking and leaving them to cool in refrigerator overnight to be recooked until golden brown the next day.
