3 Delicious (and Easy!) Vegan Recipes for This Pancake Tuesday
If you’re anything like me, you need no excuse for a nice stack of delicious pancakes. But what if flour, eggs and milk aren’t part of your diet?

With Pancake Tuesday looming just around the corner, it’s the perfect time to stack some pancakes and all the delicious toppings. Regardless of the reasons you don’t consume either dairy, eggs or gluten, I have you covered!
But first, what is Pancake Tuesday again?
Pancake Tuesday, you say?
If you’re not in Ireland or the UK, you may not be familiar with Pancake Tuesday.
Yet.
Let’s change that.
Pancake Tuesday is just another name for Shrove Tuesday. Depending on where in the world you are, you might know it as Mardi Gras (Fat Tuesday) or Carnival Tuesday.
SHRIVE (archaic verb) (from Oxford Languages)
Past tense: shrove
(of a priest) hear the confession of, assign penance, and to absolve.
present oneself to a priest for confession, penance, and absolution.
The religious name Shrove Tuesday comes from the verb to shrive, meaning “present oneself to a priest for confession, penance, and absolution.”
The day is thus named because it happens the day before the start of Lent (Ash Wednesday). If you’re not Christian, Lent represents the 40 days Jesus spent in the desert. It’s observed by several Christians, and it’s a time of reflection, prayer, and fasting.
You see, the stern aspect of Lent gives Shrove Tuesday its other names and the traditions accompanying this day. It’s the last day for a party or a gastronomical indulgence before a period of seriousness and fasting.
And because people were trying to use up everything they wouldn’t need for such a long time, Pancake Tuesday was born — after all, flour, eggs, and milk are the perfect ingredients for a traditional pancake.
When is this Pancake Tuesday, then?
Well, since Pancake Tuesday and Shrove Tuesday are one and the same, you have to check the Christian calendar to find the exact date.
It’s 47 days before Easter Sunday — meaning the date falls anywhere between February 3rd and March 9th. In 2023, Pancake Tuesday falls on February 21st.
Time for some recipes (finally!)
I have prepared three delicious recipes to share with you today.
Vegans and celiacs, rejoice! Here are three delicious (and easy!) recipes for all your pancake cravings.
Banana Oat Pancake

Ingredients:
— 1 ripe banana
— 1 cup oats
— 1/2 cup plant milk
Preparation:
1) Mash the banana with a fork and incorporate the other ingredients.
2) Scoop a small amount into a greased frying pan and enjoy!
The perfect recipe for babies — this one is suitable from weaning and can be given as finger food. The banana gives this pancake a bit of sweetness, so it’s also a good idea if you’re looking for something healthier while still being tasty.
If you’re cooking for a celiac friend, make sure to buy gluten-free oats.
Red Lentils Pancake

Ingredients:
— 1 cup red lentils (soaked overnight)
— 1 1/2 cup water
— salt and pepper to taste
Preparation:
1) Blend all the ingredients until it’s smooth. You may need to add more water, but I recommend trying the batter as it is first.
2) Pour just enough to cover the bottom of a greased frying pan in a thick layer.
3) Serve as it is, or use it to make enchiladas.
This pancake is naturally gluten-free, and it’s delicious. I like it better as a crêpe style pancake. It also works well as an alternative to corn tortillas when making enchiladas.
American Style Pancakes

Ingredients:
— 1 1/2 cup flour
— 1 tbsp baking powder
— 1 1/2 cup plant milk
— 3 tbsp vegetable oil
— 1 tsp vanilla extract
Preparation:
1) Whisk all the ingredients together until smooth.
2) For best results, let it rest for 20 to 30 minutes before cooking.
3) You can add chocolate chips, berries, chopped nuts, desiccated coconut or anything else you’d like to make flavoured pancakes. Slowly fold whichever add-ons you decide to include after the batter has rested. Or you can make it plain.
4) Scoop small amounts into a greased frying pan.
This one is my absolute favourite and a crowd-pleaser in my home. It’s guaranteed success.
My favourite way is to make plain pancakes, and serve them stacked with a generous splash of fresh lemon juice, fruits and berries, and maple syrup.

Don’t be fooled by how simple these recipes are. They’re easy to make and use simple ingredients, but they’re delicious.
