You can easily turn these already kid-friendly brownies into smaller bites just by portion size when cutting for smaller kids and that’s really all there is to it! So easy-peezy!
Are These Brownies Gluten-Free?
There is no gluten in bananas! Yay! Naturally, all fruits and vegetables are gluten-free.
Dairy is naturally on the gluten-free side but beware of certain added ingredients. Sour cream is a gluten-free food most of the time but it never hurts to do some research on some brands just in case. The choice of butter holds within your hands so be very careful not to get any made with soy or gluten ingredients. Instead, stick with the ones with less ingredients as much as possible. One of my favorite brands of butter is Land O’ Lakes olive oil & sea salt.
Chicken eggs are naturally gluten-free as well. So are flaxseed eggs. Flaxseed meal is an excellent choice to add into any recipe if you don’t want any gluten because like grain, flaxseed helps to thicken up wet ingredients together without any gluten involved.
Sweetener is actually used to replace the gluten in foods so it’s a safe bet there but Monk Fruit Sweetener will always be my favorite choice of the brands. All types of vanilla are safe in this realm, extracts, pastes and even imitation and artificial. Baking soda is also gluten-free and is naturally gluten-free. The only issue with baking soda could be the chance of cross-contamination but this is rare but to make sure you can look for a gluten-free label or research some brands prior to purchasing.
Almond flour and coconut flour are actually known to be two of the best, if not best out of all, gluten-free flours out there. Since almonds are part of the nut family like the walnut used in this recipe, it is also safe to eat as gluten-free.
Brownies
1 ½ cups granulated sweetener
1 cup sour cream
½ cup butter
1 egg
1 flaxseed egg (one tbsp flaxseed meal, 3 tbsp water, combined)
4 bananas
2 tsp vanilla extract
¼ cup almond flour
3 tbsp coconut flour
1 tsp baking soda
¾ tsp sea salt
½ cup chopped walnuts
Frosting
½ cup butter
4 cups powdered sweetener
1 ½ tsp vanilla extract
3 tbsp sugar free almond milk

Heat oven to 375 F. Grease and flour choice of brownie pan with coconut or almond flour.

In a large bowl, beat together sweetener, sour cream, butter, and eggs until creamy. Blend in mashed bananas and vanilla extract. Add both types of flour, baking soda, sea salt, and blend for 1 minute. Stir in chopped walnuts.

Spread batter evenly into pan. Bake 20 to 25 minutes or until golden brown.
Frosting

While brownies are baking, heat butter in a large saucepan over medium heat until boiling. Let the butter turn a delicate brown and remove from heat immediately.

Add powdered sweetener, vanilla extract and milk. Whisk together until smooth (it should be thicker than a glaze but thinner than frosting).

Removed brownies from oven once done and put onto a cooling rack. Using a spatula, spread the brown butter frosting over the warm bars (the frosting will be easier to spread while the bars are still warm.)

Cut brownies into squares then serve and enjoy!
